Cheesy Scalloped Potatoes with Bacon
Ingredients
- 6 slices thick-cut bacon, diced
- 4 Tbsp butter
- 4 Tbsp flour
- 2 cups heavy cream
- 1 cup chicken broth
- 3 medium russet potatoes
- 1/2 lb Medium Cheddar, shredded
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Chop the potatoes into thin coins.
- In a large saucepan over medium heat, cook the bacon, stirring until just crispy. Remove the bacon from the pan and drain off the fat.
- In the same saucepan, melt the butter over medium heat. Slowly add the flour and stir until smooth, for roughly 2 minutes.
- Add the heavy cream slowly, stirring constantly. Do the same with the chicken broth. Then, bring to a simmer and let thicken for 2-3 minutes. Set aside.
- In a baking dish, layer half the potatoes, bacon, cheese and sauce. Add a second layer on top, leaving a handful of cheese for later.
- Cover the baking dish with foil and bake for 50 minutes. Raise the oven to 425 degrees Fahrenheit. Remove the foil, add the rest of the cheese and continue baking for 20 minutes or until the cheese is melted and the potatoes are easily pierced with a fork.
- Let cool and serve!
