Recipe: Babcock Brick Cheese Pizza

This pizza recipe has two secrets to success: it uses a cast iron pan and Babcock’s Brick cheese. Try it at home for a delicious dinner!

Pizza Dough

  • 4 3/4 cups flour
  • 1 tsp instant yeast
  • 1 1/2 tsp salt
  • 1 3/4 cup water
  • 1 3/4 tsp olive oil

Recipe: makes 4 pizzas

  • Combine the flour, yeast and salt and whisk before adding the water and olive oil. Mix until a shaggy dough forms.
  • Place the dough on a lightly floured counter and knead for three minutes. Rest for 15 minutes, then knead for another three minutes.
  • Separate the finished dough into four pieces. Form the pieces into balls.
  • Place the dough pieces into a bowl with a drizzle of olive oil and rest, covered, for 1.5 hours or in plastic bags in the refrigerator overnight. If refrigerating the dough, remove it from the refrigerator 2 hours before baking.

  • Olive oil
  • Pizza dough
  • Pizza sauce
  • Brick cheese
  • Toppings of your choice (we recommend fresh basil or Varsity Meats pepperoni)

  • Preheat the oven to 500 degrees Fahrenheit.
  • Flatten a piece of dough into a pizza crust the size of your cast iron pan.
  • Heat a skillet on the stove on medium heat. Coat the bottom of your skillet with olive oil and add your crust to the pan.
  • Add your desired toppings on top of the crust.
  • Turn off the heat to the pan and place it in the oven.
  • Bake until the cheese is melted and the crust is lightly browned, or about 10 minutes.
  • Remove the pizza from the oven and place on a cutting board to cool.
  • Serve and enjoy!
